No Bake Cookies

This is a super yummy, super simple cookie recipe!!  It's  wonderful combination of chocolate and peanut butter! ((Recipe below pictures!))

For this recipe you will need, milk, sugar, peanut butter, vanilla, butter, cocoa, and quick oats.  Most of these things are things we always have on hand so this is our go to cookie!


First things first, get a medium sized sauce pan and add your sugar, cocoa, milk, and butter.


You want to cook this at medium heat, and let everything melt and mesh together.


If you used cold butter like me, it'll take awhile!  I usually use a beat up old wire whisk to get things nice and incorporated, and too keep it from scorching.  You want to stir rather often until it comes to a boil.


Between stirs of your chocolate mixture, I usually get my oats measured with my peanut butter so once it starts boiling I'm all ready to go.


I also try to manage to get some foil, or wax paper down.  In this case I sprayed my foil with a little non-stick spray just in case!


Once your chocolate mixture is at a rolling boil, you want to boil it for 1 whole minute.  Stir CONSTANTLY!  It will scorch if you don't.


After the minute, add your oats and peanut butter and start mixing!


Once you have everything well mixed, you can get ready to plop out your cookies!


I use this cookie scooper my wonderful husband got me!


Now if only I was patient enough to use it to make cute little cookies!!

I really hope you make this, or at least give it a try!  I've seen tons of adaptations you can make to this, including chunky peanut butter or even coconut.  I've never tried it, but I would like to eventually!

No Bake Cookie Recipe

2 cups sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla extract
1/2 cup peanut butter
3 cups quick cooking oats

1.  In a saucepan over medium heat, combine the sugar, cocoa, milk and butter.  Bring to a boil, stirring occasionally.  Boil for 1 minute, then remove from heat and stir in oats and peanutbutter.
2.  Drop by teaspoon/tablespoon/cup (hey, if you like big cookies, who's to judge?!) onto waxed paper.  Allow cookies to cool one hour.  ((We hardly ever wait an hour.  As soon as they aren't burning hot, is when the feast begins!))

HAHA! I love these...these are a staple in our house. My mom makes these ALL the time! {we tend to call them oatmeal turds thought} haha!

yeah these are my moms favorites. we call them poop cookies. and chunky peanut butter in these is the best.
